Mexican Chicken Corn Chowder
Chowder de maiz mexicano del pollo
Mexican Chicken Corn Chowder
Ingredients
1 ½
Pounds boneless chicken
½
Cup chopped onion
1
Clove garlic, minced
3
Tablespoons butter
2
Cubes chicken bouillon
1
Cup hot water
¾
Teaspoon ground cumin
2
Cups half & half cream
2
Cups shredded jack cheese
1
Can cream corn
1
4oz can diced chilies
1
Tomato chopped
Directions
1. In a Dutch oven, brown chicken, onion, and garlic in butter until chicken is no longer pink.
2. Dissolve bouillon in hot water, pour into Dutch oven season with cumin
3. Bring to a boil, reduce heat to low, cover, simmer for five minutes.
4. Stir in cream, cheese, corn, chilies.
5. Cook stirring frequently, until cheese is melted.
Tip: Set aside tomatoes for topping, Garnish with cilantro, add hot pepper sauce to taste.

Our first Lesson, "The Truth Project"
Our little Church is officially started we had our first DVD viewing and discussion on Tuesday. It was a learning experience for many of us. Some of us are just starting our walk and some are getting along with their walk just fine, but we all got allot out of the DVD. The group discussion went well, questions and answers were processed in an understanding manner. I can't leave out the pot luck dinner. All of the food was delicious, Several chicken and other healthy dishes, and then the deserts. Thank you to all for help getting everything together, especially our hosts, thank you for sharing your home.
