Mexican Chicken Corn Chowder
Ingredients
1 ½
Pounds boneless chicken
½
Cup chopped onion
1
Clove garlic, minced
3
Tablespoons butter
2
Cubes chicken bouillon
1
Cup hot water
¾
Teaspoon ground cumin
2
Cups half & half cream
2
Cups shredded jack cheese
1
Can cream corn
1
4oz can diced chilies
1
Tomato chopped
Directions
1. In a Dutch oven, brown chicken, onion, and garlic in butter until chicken is no longer pink.
2. Dissolve bouillon in hot water, pour into Dutch oven season with cumin
3. Bring to a boil, reduce heat to low, cover, simmer for five minutes.
4. Stir in cream, cheese, corn, chilies.
5. Cook stirring frequently, until cheese is melted.
Tip: Set aside tomatoes for topping, Garnish with cilantro, add hot pepper sauce to taste.

OK, I say we do a cook book, because every one that has brought home cooked meals are my new heros...ummm :) Now the desserts can be store bought or home cooked those I don't care just bring em :) Chandra
